Left over chicken...soup maybe?

I cooked a chicken earlier. Now have the left over brown meat(legs, wings, etc). Chicken was cooked with garlic oil, chorizo and proscuitto.

Could it be turned into soup maybe? What else to add?

If not, what else?

Forgot to add - needs to be something I can freeze as won't be eaten til next week now.

DH and DD not really keen on brown meat on its own either - so needs to be something sauce based!

I'd freeze it as it is so you are not cooking it twice before freezing. you can then look for inspiration before it needs defrosting.

I make chicken pie with my left overs. Shop bought pastry, tin of chicken soup or stock. Delish.

I have the carcass so I am currently boiling that with some sweated onions, a chopped chilli and some peppers.

Don't have pastry in so def not pie today.

Still think DD would prefer soup tbh though, so maybe a spicy soup?

I make chicken flautas with leftover rotisserie chicken. Dd2 and I aren't keen on the brown meat, and this hides it really well:

Finely chop an onion and however much garlic you like and sweat off in olive oil.

Purée a can of chopped tomatoes, and add these and a tablespoon of tomatoe purée to the onions/garlic and simmer for 20 minutes.

Finely chop the leftover chicken.

Drain a can each of sweet corn and the bean of your choice. I use black beans.

Combine the corn, beans and chicken with the tomato/garlic mixture.

Grate some cheese, whatever you fancy, I use strong cheddar.

Put some of the cheese and the chicken mixture on a tortilla and roll up. I put it in the middle and roll the sides up.

Turn over, so the seams of the tortilla are facing down, and place in a baking tray. Cook for 20 mins - my oven is in F, I cook them at 375 degrees (adjust as necessary for fan assisted). The tortillas should be browning and getting a bit crispy when ready.

Serve with sour cream, guacamole, salsa, whatever you like.

They are really good, I promise.

Dd chose soup so she and i turned it into a spicy chicken, chorizo, tomato and red pepper soup. She reckons it is very tasty - she tried it dying cooking. She and DH can have some for lunch today and we will see.

Ooh that sounds good OP.

My dcs like chicken noodle soup made with leftovers. It's a fairly flexible recipe but usually involves some star anise, soy sauce, mushrooms, maybe beansprouts/sweetcorn/spinach.

DD loved it :) Have some frozen batches for her and DH to have over next couple of weeks.
