roast (in v hot oven with olive oil - don't peel until cooked, it's easier then) then make soup or put chunks into spinach salad with pinenuts

Soup.

1 squash, peeled, chunked
1 can coconut milk
1 small onion, fried until translucent
1 small red chilli, deseeded, chopped

Cook until squash soft. Whizz in a food processor/liquidiser.

Yum.

SOUP

peel and chop, cover with vege or chicken stock - can put onion ( sweet potato, potato in as well) boil until soft. Blend to make it rich and thick - top with a swirl of cream and crusty oven baked bread.
