Use 200g of plain chocolate, and about 50m of double cream. Melt choc and add cream, then whip with a balloon whisk until lighter in colour. You can then pipe the mix into petit four cases, adding alcohol if required before beating. You could also make round ones by taking pieces and rolling into balls

I made some g+t ones by flavouring with gin and angostura bitters
