What to do with tinned salmon..

..other than make sandwiches?

I love tinned salmon sandwiches on fresh brown bread, real butter, loads
of black pepper. We eat this regularly for lunch.

But, I would like to use the salmon for something else for a change - wnay ideas?

I am not sure I fancy it on pasta, I am not mad about poached salmon with pasta so that is sort of putting me off a bit.

Was thinking of fish cakes of some sort but don't know.

I inspire me please, tell me all the delicious things you do with yours Grin

Right.... I haven't made these yet- but have a tin of salmon in the cupboard waiting for these fishcakes to be made

I will tempt you anyway...

Cut a few leeks in thin rounds, put them in a frying pan with a bit of water, cook them for 5-10 minutes. Add sour cream (quantities depends on how many people of course!), the salmon, the pasta, and a generous squeeze of lemon. Lots of freshly grated pepper on top. Mix all and dish out!

Whizz it up in the blender with lemon juice and a dollop of mayo, maybe a touch of chilli? Or mix in a few capers or olives - salmon pate. use to top bruschetta or crackers.

Tinned sardines work well for this too.

Roll out a sheet of ready made puff pastry.
Flake the tinned salmon on to half of the sheet.
Sprinkle some steamed broccoli over the salmon.
Spoon some creme fraiche over salmon and broc.
Season with pepper and thyme or chives.
Fold over pastry, seal edges, brush with egg and bake.
Easiest ever salmon on croute Smile

Thanks for all the other suggestions too. It's great to have a few new ideas for a food item that is so familiar you are almost blind to its potential iykwim?
