recipe ideas for vegetarian daughter

My DD has just decided she wants to be a vegetarian, which is absolutely fine by me (I used to be one myself and often choose not to eat meat), except that she is already an exceptionally fussy eater, so she doesn't like rice, pasta, sauces of any sort, casseroles etc. She has always preferred 'meat and 2 veg' type meals, roast dinners and things like that.

So most of the veggie food I would make her she probably won't eat. I'm not keen for her to rely on cheese and eggs as her main protein source.

I'm looking for ideas for recipes she might like. Do you think I have to put my foot down and tell her if she is not going to eat meat, she has to a bit more flexible about the other foods she doesn't like?

Roasted veggies in Yorkshire pudding with cheese or tomato sauce?
Egg curry?
Bean chilli?
Cheese & potato pie?
Spicy lentil pie (curried lentils & carrots with a cheese layer in a pie)?
Bean burgers?
Nut burgers? Nut roast?

Yes, I would. I have 3 veggie dds, DP and I don't eat much meat but we do when out, and we eat fish. I tell them they can be 2 of the following 3: vegetarian, fussy, eat out much. They are fussier than I'd like, but it gets better.

the easiest if she likes traditional roast dinners is doing that but with a veggie sausage, or a nut roast or lentil roast, and veggie gravy. Roast dinner is quite simple if you don't use meat juice in the various bits. Lots of roast veg. You can roast halloumi in it.

Eggs are a staple here, in all sorts of varieties, they are easy and healthy, why not rely on them?

Hummouse is another staple, fussy kids will quite often eat chickpeas in that form.

Baked beans is another very easy veggie protein.

if she wont eat sauces or casseroles or mixed veg concoctions or pulses longer term though she won't last as a veggie.

Thanks for the replies - that's really helpful. maddadam you are right - she is going to have to widen her tastes - I'm kind of hoping this will motivate her to try new things she has rejected before.
