Batch cooking ideas that aren't a casserole or meat-based?

I've made coq au vin, beef bourguignon, braised sausages, chilli and meatballs.

Any batch cooking ideas that are a bit fresher/lighter IYKWIM?

Soups also freeze well... Maybe pumpkin and apple, carrot and ginger or spicy parsnip would work

You can make them in individaul portions to freeze or in one big dish. We like mixed roast vegetables in tomato sauce, chicken and cranberry sauce, spinach and rocotta, minced beef.... there are lots of fillings you can do.
