Is there such a thing as a really good, nice, inspiring courgette recipe?

Because I've never come across one.

I bought loads of them yesterday because the market were selling them off cheap at the end of the day for a pound a bowl. Now I'm looking at all 20 of them really dubiously. What on earth can I cook with them?

Slice them into long slices, lay in dish drizzle with oil, add fennel, coriander seeds, chilli, salt and pepper and roast.
