Ideas for egg main courses please

Find myself with 2 large boxes of eggs. Apart from quiche and omelette, what recipes do you have for main courses to use some of them? We're not vegetarian so ok if it includes meat, but equally ok if not. My usual recipe (boiled eggs in a cheesy leek sauce topped with mashed potato ) has been made a few times recently. Might try an egg curry but wpuld appreciate a tried & tested recipe. Thanks

This Nigel slater courgette and basil frittata is delightful - I've made it many times and it is always delicious. It's a bit of a faff with the squeezing out of the water from the salted courgettes but totally worth the effort.

I make tortilla, admittedly still an omelette but a very yummy version .
Also egg fried rice
Or baked eggs (can be baked with a but of cream, or ham, or tomato?
Eggs benedict ie with holland aide sauce and on toasted bagels, with or without spinach under it
Cheese soufflé ? I love cheese soufflé!!

Well most of my recipes with eggs only use 1 egg per person, which I guess isn't enough to get thru your egg batch at a reasonable rate?

I often do a frittata - great as a main with salad and/or wedges, or as a lunchbox item.

Basically you can cook any veg you like - potatoes, peppers, spinach. Add a bit off cheese to it all, and add whisked eggs.

Put the pan in the oven for 15 mins at about 190 c til set.

The great thing about it is you can chuck in any veg you like, or need to use up. Make sure your frying pans can go in the oven tho,

Delia has an egg and lentil curry that is a bit of an acquired taste but I love it!

I make Madhur Jaffrey's spicy scrambled eggs (recipe serves 4):

Heat oil, put in 1.5 tsp black mustard seeds then a couple of seconds later when it pops add 4 sliced spring onions and 2 cloves of chopped garlic. Fry for 3 mins. Then add a tin of chopped tomatoes (the recipe says fresh ones chopped but I always use a tin), 1/2 tsp fresh grated ginger, 3 tbs chopped coriander and as much chopped green chilli as you like. Fry for 6-8 mins until the moisture from the tomatoes has gone, then add some black pepper. While that's doing, beat 7 eggs, add a bit of salt. Turn the heat under the sauce to low, then add the eggs and stir until they're scrambled.

Huevos Rancheros or Mexican Eggs as they're called in our house is delicious. I'm sure my version isn't anywhere near authentic but here goes.

For 2 people I soften some onion in a lidded shallow pan add 1 tin of baked beans and then raid the spice rack. I'll usually add some cumin, coriander, oregano, chilli flakes, Worcestershire sauce and black pepper. If you have any peppers I'd chop those up and add aswell. Let it simmer for 5 minutes or so. Crack in the eggs (I do 2 each) and cover. Leave to cook til the eggs are set to your liking.

Eggs Florentine is one of my favourites, bed of spinach, nestle your eggs in, cover with cheesy sauce and bake, yum. Rich and filling: a little goes a long way.

Florentine pizza, egg curry is brilliant as shakshuka, Huevos rancheros, devilled eggs, mayonnaise, frittata, scotch eggs, pancakes/crepes, brioche/enriched bread/corn bread.

I love smoked haddock with a poached egg on top. Served with rosti and spinach. Yum.

Gammon, egg and chips.

Pavlova with the whites and Creme caramel with the yolks.

Tortilla/Frittatta - remember you can use things lice rice or pasta in them as well as potatoes if you want them to have carbs in.
Lemon tart
Creme brûlée
Baked savoury cheese cake (or sweet for that matter)
Bread and butter pudding (particularly nice if made with panettone and sultanas soaked in pesto ximinez sherry)
