Favourite Sunday roast

As soon as it starts to feel autumnal I have the urge to revive Sunday roasts which are dropped in the summer in favour of salads and bbq's. I'm having the first of the year tomorrow and have invited some friends over. I always tend to do the same thing, chicken, roasted baby carrots, parsnips and chalots with potatoes either roasted or mashed with a vat of gravy.

What's your favourite Sunday roast, needing inspiration and new ideas.

Oooh, I love Sunday roasts. I eat them all through the summer as well, just summer-fied (so roast chicken with chorizo, served with roast potatoes sprinkled with gremolata and a green salad, for instance).

My absolute favourite is rib of beef, cooked rare, with roast potatoes cooked in the beef fat. Homemade yorkshire pudding. Glazed carrots and spiced red cabbage. And peas, dh insists on sodding peas with every Sunday roast. All accompanied by some really good red wine.

Guess what I'm having tomorrow?

That's sounds delicious Calamity. How do you do your cabbage if you don't mind sharing?

I just throw a shredded red cabbage in a lidded casserole with a thinly sliced onion and a thinly sliced cooking apple. Add in a tablespoon of red wine vinegar, a tablespoon of brown sugar, a cinnamon stick, a few cloves, some freshly grated nutmeg and salt and pepper. Put a lid on a cook very slowly and gently for a few hours (it's actually nicer if you cook it the day before and heat it up).

Yum! That's going in my cook book. I'll give you credit when it inevitably gets published! Wink

I like a lamb shawarma, pulled pork, a chicken cooked with a chipotle marinade, Jamies lamb shanks, Korean BBQ beef shin.

One of my favourites is spiced lemon chicken, bombay spiced roast potatoes, broccoli, peas and gravy. Makes a change.

slow cooked brisket with caramelised onion gravy, mashed potatoes, cauliflower cheese, carrots and yorkshire puddings.

We had a lovely lamb and potato bake this week - slow cooked lamb shoulder, stripped off the bone, layered with thinly sliced potatoes, fried onions and my homemade mint sauce (bunch of mint, bunch of parsley, 4 garlic cloves, olive oil and balsamic vinegar blitzed together). Beef stock poured over and the top brushed with oil. Served with veg and a red wine gravy. It was lush Grin

Roast gammon joint with roast potatoes, cauliflower cheese and carrots.

Stuffed pork tenderloin is good and quite quick. You can do various stuffings from sage and onion, apricot stuffing works well, I did a manchego, quince jelly and sage leaf one which was good, couscous, pomegranate seeds, almonds and parsley is nice. Also works well if you wrap the tenderloin in parma ham (stuffed or not).

Last night we had roast beef with Yorkshire puddings, 2 types of stuffing, roast potatoes, roast parsnips, red cabbage, leeks and carrots.

Mmmmmmmmm I wasn't up early enough to make pulled pork so today we're having roast loin. Drool.

Armadillo that lamb and potato bake sounds delicious.

Today we're having roast chicken, rice, macaroni cheese (caribbean style), yorkshire puddings, roast sweet potatoes and whatever veg is in the fridge as defrosting the fridge freezer.

All of these sound amazing. Defo going to be stealing some ideas. I pretty much did my usual yesterday but I have resolved to make some new the Sunday after next. I also really want to have a crack at Beef Wellington. Anyone got any tips for me?

Tandoori spiced roast chicken and veg pilau with lots of salad, yum.

Or slow cooked lamb shoulder with caper sauce and mashed potatoes

Roast pork with apple sauce and crackling

Love them all!
