Tuna burgers

Had some yummy tuna burgers in a cheapo cafe today. I've googled recipes and they all seem to recommend using fresh tuna steaks. Would it make a big difference if I used tinned? I can't really believe the cafe I was in would use fresh.

I can't either, unless it was a v.v.good cafe. My recipe for tuna burgers is:

Tin of tuna (in brine) - large tin will do four people
Juice of half a lime
1 - 2 spring onions
Black pepper (ground)
Dash of chili powder, or one fresh chili (don't have to use chili, but it enhances the flavour)
Breadcrumbs (probably two handfuls max)
1 large egg

Mix everything together and let sit for ten minutes. Shape into burgers (scooping into crumpet rings and pressing down works well, and then just lift off the ring). Cook on a hot frying pan.

Let me know how you get on - also, just realised, I should have specified tuna needs to be drained! (You probably already knew that, but just in case...)
