Vegetarian every day meals

I'm trying to cut down my grocery budget by including atleast 2 vegetarian meals a week.
I generally do a veggie stir fry, and a veggie frittata- but that's it! What are your vegetarian 'go to' recipes?

Some of my regular quick and easy veggie meals are spag bol, chilli, curry, pizza, wraps, veg soup, veggie sausage casserole etc.

We had halliumi wraps yesterday with a salsa made from fried tomatoes and peppers and some yoghurt. But might not be considered cheap!

We do stuffed peppers - roast them with garlic oil first then stuff with cooked rice, raisins, chopped tomatoes, pine nuts, halloumi (in v small pieces - you don't need much), add a little cumin and some cinnamon and bake for another 20 minutes or so.

Dh used to eat a lot of veg ready nit cutlets with regular eg in the side. Thy are not super expensive but possibly not in your cheap and cheerful option?

We're veggie so every day is meat-free day! Our standards include:

Pasta with pesto or tomato sauce
Veggie burgers
Baked potato w/beans
Quiche
Veg pies & mash
Stir fry
Veg cheese bake
Quorn chilli
Veg kebabs
Spanish omelette
Veg curry
Thai green curry
Soup

No link. It's a scan of a page from a recipe book for years ago.

Soak a cup and a half of mung beans overnight.
Place in saucepan, cover in water and boil until water evaporated and beans soft.
Mash to required texture.
In another pan fry a chopped onion until soft.
Add two cloves of chopped garlic, two chopped peppers and a chopped chilli.
Stir in two tbsp tomato purée.
Add beans and 300ml water, stir and season.
Simmer for ten minutes.
