Salad in a jar, inspiration please!

I know I should be able to come up with ideas myself, but I'm stuck - I made a couple of salads like this for DH and I to take to work last week: the principle was great, and I'd like to make a load at the beginning of the week to keep in the fridge.

But my salads were a bit boring - my ingredients somewhat pedestrian - can you inspire me with delicious salady combinations?

How are you with beans and pluses? Have you tried Giant Cous cous (one of my favourites). I add roasted veg (which we've probably eaten the night before) and shredded chicken (or similar), some herbs (coriander if I've added chillies, basil if a more italian feel).

I also use Quinoa which is really nutty, with cucumber, lemon juice and tuna.

Do you use rape seed oil? It's got a nutty flavour and I often prefer to olive oil and don't always needs to make a dressing if in a rush.

I've never seen this. Brilliant idea. I usually take dressing separate to salad but this could work too.

I like: lettuce, red pepper, cucumber, pine nuts, avo, feta with a lemon/oil dressing for a v simple salad.

Yesterday I had new potatoes, tomato, feta, avocado and green beans which I just dressed with oil and a little salt.

Or couscous, chicken, fried courgettes, pine nuts (optional), tomato, yellow pepper with a pesto dressing.

Dh likes butter beans, tuna, tomatoe, red onion, avocado (or green beans if we don't have any), with a olive oil/balsamic dressing.

These are good ideas, thanks! The jar works great, you just tip it all out into a bowl and it sort of dresses itself.

Love pulses, roast veg, avocado. What would work well with some blue cheese? Spinach, I guess, what else?

What about green soya beans, halved cherry tomatoes, sliced radish, spring onion and seeds?

SenoritaViva · 25/09/2013 05:01

Do you like halloumi? My absolute favourite thing. I know it can go rubbery but if you cook it till its crispy (with a little chilli is particularly good) then it will be fine.

I like the blue cheese idea; you could also try Boursin or a soft cheese like Camembert with onion marmalade.

I'm a fan of a little cooked red onion in a salad too and you could try Parma ham or salami (not my thing personally).

Ikea have sturdy clip top jars really cheap, or if you want to copy people on Instagram exactly, Lakeland have the American mason jars.

I know, it’s a bit lame isn’t it? I have a really nice salad tub with a clear lead. And as a separate salad dressing thing. It’s just maybe a way of living one in the fridge for my husband to eat more healthily at lunchtime
