Impressive but easy dinners for entertaining

I made smitten kitchen's gazpacho halibut with salsa the other week when a work colleague came round, it was delicious and easy. I normally make a moroccan chicken with preserved lemons and olives as it can sit in the oven but I've made it lots and need a new trick.

Next week we have some more guests round. I'm out to impress but not spend a week in the kitchen. I'm a fairly good cook but out of inspiration. Oh yes, DH is gluten intolerant so pies and pasta are out.... Any ideas?

I'm a veggie, but watched Tom kerrdiges show last night and this looks amazing.

I always try to go for something oven-baked so I can prepare in advance. Fish pie is a good option (with mash, so gluten free). Also moussaka, or something similar - a bit like lasagne but with aubergines instead of pasta.

Google nigella's chicken and chorizo bake, it's a one tray bung it in the oven and leave it job, serve with crusty bread to mop up the juices and salad and voila a beautiful tasty meal!
