i usually take the easy option when cooking chilli con carne...i buy the jars....but i thought today i'd attemp a homemade one....soo.......
i have...

  • tin of chopped tomatoes
  • kidney beans
  • fresh chillies
  • mince
  • onions

...what else do i need?????

  • 1 vegetable stock cube put into 225 ml boiling water (I do it in a jug), 1 clove garlic, 1 teaspoon of dry mixed herbs. When cooked, I like sprinkling mine with grated cheese. Enjoy!

Fry mince
Fry onions,garlic and chillies and cumin powder(a teaspoon) (if using) in same pan (you may need a little more oil.
After about 5 mins,add tomatoes and a good squeeze of tomato puree.
Let it simmer.
Ten minutes later,add your kidney beans.
Simmer for another 20 mins.

Some tomato sauce,or tablespoon of sugar or sweet chilli sauce added at tom. puree stage will make it mellower.
You can also add a 1/2 tablespoon of cocoa (not drinking chocolate!) powder,as in parts of South America,cocoa has been used in savoury dishes.

You don't really need stock.
A dash of soy sauce works well too if you need a bit more of a meaty edge to it.
