Courgette Bread of Muffins, anyone?

I found some courgettes lurking at the back the fridge. They look a bit battered but will probably turn to mush if cooked.

Has anyone got a nice recipe for bread or muffins? Its a shame not to use them.

Ditto aubergines. Don't know why I buy the things!

One of my favourite ways tobeat aubergine is to slice them into rounds about 1/2 inch thick, sprinkle salt on both sides, give them 15 minutes to lose some water, then dust some salt off, roll them in flour and shallow fry them.

That sounds nice! I think I had something like that in Italy.

I found my recipe... Under 'Zuccini Bread' (d'oh - US book!).
