Help me creating a tasty menu for lunch for a Muslim friend

She is on a diet so ideally I want something light but fulfilling.
She is not fun of seafood and obviously doesn't eat pork
I would like to serve something similar but different to her own food -Lebanese-, in the sense of freshness, taste etc...
Is it even possible?

She has had chicken at mine before but never asked if it was halal... But I know she buys halal for herself. However I would go for a vegetarian option, if I have the choice.

Most of my muslim friends eat anything veggie. They do check to make sure there is no gelatine in cakes or puddings but otherwise dont stress too much .
A nice big salad with cous cous and a home made dressing would do I think as she is on a diet. Nothing too different to what you would serve a non muslim in fact. If you have choices such as cheese or chicken then she can opt to put it on her plate or not. Nice fresh bread is always welcome too .

oh thanks but she doesn't like couscous either.
she likes lentils, bulgar wheat, but that's what she normally cooks anyway
but yy for nice bread and nice salad, can you elaborate a bit more? please?
last time I did a rice dish with chicken that goes in the oven.....also she likes chicken lasagna....but it's a bit heavy....
any idea on a light and tasty rice dish or similar?
