How long do you soak your fruit for before baking your cake? I've heard of people soaking their fruit for weeks in all sorts of different liquids.
any successes? what did you use?

thanks

About 48hrs in brandy.. Quite a lot of brandy. I'm making mine today :)

I don't - I make the cake, then soak the alcohol into it after it's been cooked several times over a few weeks.

Sometimes just a few hours. I have found that too long a soaking makes for too rich a cake so I tend to soak fruit at the most for a day. I use cointreau or grand marnier just because that's what's in the cupboard.

Ok. Thanks. I soaked mine for a week in brandy last year. It was just lovely cake even if I do say so myself. Wink.
Just wondered what others do.
