What can I do with Kohl Rabi?

We get one in our veggie box every week but other than slice it up and put it in a stirfry I've no idea what else to do with it. Can it be eaten raw?

Apparantly it's quite nice raw in a salad or a coleslaw type thing.
I believe that in France they sometimes boil it and toss it in vinaigrette and then let it cool down before serving. hth.

Thanks C - it looks like it could be grated to make coleslaw. The kids quite like it - mostly because it looks a bit alien like and has a wierd name.

Kohl rabi makes the most delicious soup! You need about three of them though, an onion, veg stock and cream to stir in at the end. Really delicious. We also eat it raw. Never tried it in a mash but I would if I were you and only had one! Also with a bit cream!
