Need a WOW factor dessert!

Just offered to make a dessert for 5, dinner party in October.

Need something that's not too tricky but looks and tastes great!

raspberry jelly made with fizzy rose instead of water (or half water to dilute jelly, then the volume topped up with fizzy plonk). Make in posh bowls, with tiny dollop of cream and dark chocolate bits. (I found some heart shaped things in the sprinkle section of the supermarket).

I thought gelatine might be involved when I saw the word "jelly" but it actually sounds doable for me!

Dip sponge fingers in 150ml strong coffee mixed with 75ml amaretto, brandy or Baileys. Layer up with a mixture of mascarpone mixed with 2 egg yolks (beaten first with 50g caster sugar) then with stiffly beaten egg whites folded in. This should make two layers of each in a dish. Refrigerate overnight (or for a bit anyway), then sift over a whole bunch of cocoa powder.

Lemon Syllabub? Dead easy to make, you can add a dash of brandy to make it a boozy pud and the wow factor can be that it's served in nice glasses and decorated with either some posh thin biscuits or chocolate curls or both

Nigella's cloud cake is really good and very simple.

The raspberry and amaretti crunch cake on the BBC Good Food website is delicious and very easy to make. Basically you put flour, soft butter, ground almonds, eggs and golden caster sugar in a bowl and mix until blended well. I use my kenwood mixer but you can use a hand mixer. Put half the mixture in your baking tin. Layer raspberries and roughly broken amaretti biscuits on top. Put the other half of the mixture on top and then layer the remaining raspberries and amaretti biscuits on top again. The only thing to note is that it states that the cooking time is 50 minutes but when I read the comments about this recipe they all said that the time wasn't long enough so it needs to be cooked for 70-80 mins. Its also easy to transport. It will keep well for a couple of days in an airtight container. I have used both fresh and defrosted raspberries and both work equally well. I also puréed the remaining raspberries and added some natural sweetener for a basic raspberry sauce to have on the side with cream or ice cream if you prefer. It has gone down very well at a few dinners we have had.

Just thinking the rose jelly thing is meant to have a handful of berries chucked in-- arranged prettily in the posh bowls too. I usually use frozen.

If you use sugar free jelly and go easy with the cream/choc it's also relatively low cal, low sin, low points or whatever you might be counting.

I think the orig recipe had them in martini glasses or champagne flutes or some such. I keep martini in my martini glasses so just bought some little glass bowls at the supermarket. You could use anything I reckon, though obviously the wowier your glass, the wowier your desert!
