Easy warm pudding for you

Eve’s pudding

Just tried this tonight.. cheap and tasty old fashioned pud.. enjoy!!

Ingredients:

3 large cooking apples

Sugar to sweeten

110g/4oz butter

110g/4oz sugar

1 egg, beaten

110g/4oz flour

Sliced almonds to sprinkle

Method:

  1. Stew apples very lightly, sweeten to taste.
  1. Preheat the oven to 180°C/fan 160°C.
  1. Melt the butter and sugar together in a saucepan and allow to cool.
  1. Add the egg, then add the flour and mix.
  1. Put the apples into a pyrex dish and pour the cake mixture over the apples.
  1. Sprinkle with almond slices and bake for 1 hour.

Ah, ha ha.. I am making the best of my last few days of pregnancy.. back to sugar free jelly then !!

I didn't bother with the flaked almonds and it didn't make any difference.

Ah. Unfortunately I thoroughly enjoyed the last few days of my pregnancy Grin.

In fact, looking at the scales I appear to have thoroughly taken advantage of most of the pregnancy!

But the pudding sounds a really nice autumnal treat.
