need some inspiration please, was thinking of doing pork and apple meatballs but didnt know what kind of sauce would go best (don't have any eggs) am stuck

Pork and apple meatballs might go nicely with a sauce made of creme fraiche, spot of dijon mustard and shredded leeks. Usually do this sort of recipe with grated lemon zest and lots of garlic in the mincemeat mixture.
I get pork to stick together fine without egg...blitz it in the food processor to make the texture a bit finer and it will probably be OK.

not sure it'd work with the apple, but we do spicy pork meatballs in tomato sauce with pasta.

oh, and we don't normally need an egg to bind either, but for the tomatoey recipe a squirt of ketchup might help if it's too dry.

I just use pork mince / breadcrumbs / grated cheese to make meatballs and do a tomato sauce. Seems to bind together OK without eggs.

yes! I just tend to open a tin / carton of passatta to make life much easier. And horrors of horrors have been known to add a bit of sugar to it sometimes as I always think it tastes a bit sharp on it's own.

oh bum, it's one of DH's specials but will have a go (have emailed him so real one may turn up later):

Think he just finely chops an onion and some red chilli and mixes into the mince, then seasons with salt, pepper, oregano. Makes into walnut size balls (everyone helps) and fries till just golden ie cooked through.

Tomato sauce is finely chopped onion garlic (carrot & celery optional but good for getting extra veg portion into meal) cooked gently in splosh of oil till soft, then add tin of toms. Splosh of balsamic vinegar, pinch of oregano, lots of pepper, salt if you Do Salt.
Cook 20min ish and taste - may need more pepper and/or a pinch of sugar. We blend it at this point as smooth sauce is better with meatballs than lumpy but not essential.

sling meatballs into sauce, heat everything through, serve on pasta shapes of your choice.

Ages ago, someone (Cod, I think) posted a recipe for pork and apple burgers which were really good. Very simple to make and quick to cook.

it all went horribly wrong (checked the mince and it was out of date!!!) so annoyed hating waste food so will have to try again this week after i've been shopping thanks for all the suggestions
