How do you make a 12inch sponge light and fluffy??? I am struggling as the 2 occasions I have attempted to make it it has been heavy and greasy. I don't know what I am doing wrong :( . Any tips please the all knowing mumsnetters :) xxx

I used 6 cake mixes so..... 1050g flour, sugar, margerine,24 eggs and 6 teaspoons of baking powder

Coco, got stacks of books that say almost the same, i have one for you if you want,its more a madeira cake, .
700grms butter,and caster sugar.
750grms s/r flour
12eggs
6tbsp milk
Bake on gas 3,150c

Put all ingredients on mixer on slow speed to combine then beat for 2mins till light pale and fluffy.

Cook for 2 or 2 and half hrs.

I struggle with bake cakes from time to time, good job they dont come up very often.

Try halving the mix and cook in two batches, obviously the ovens on longer but at least your cake will turn out fine.

That seems like a lot Confused. I've got a 10 inch sponge in now which I've made many times before and it's 12oz flour/sugar/butter, 6 eggs and 3tsp baking powder. Seems a big jump to 24 eggs...

But it's probably me that's wrong!

Do u use stork? And do you grease your tins?

When you use grease use flour too? And stork is best for cakes

I do also flour the tin aswell and it was still greasy. Shall try out suggestions and let you know :)
