Homemade potato wedges.

Thought I'd make potato wedges for tea tonight.

Do I need to use baking potatoes or can I use any kind including sweet potatoes?

Do I just cut the potatoes into wedges, put on a baking tray, drizzle with oil and cook in the oven?

I use any kind (sweet potato wedges are yum!) I cut the potatoes into wedges, on a baking tray, drizzle with oil, sprinkle on some paprika and some salt and pepper. Bake for 30-40 mins (I think, been ages since I actually did make them) turning occasionally.

I really want wedges now.

Any potato is fine but try to avoid the ones that go fluffy and fall apart.

I wouldn't use new potatoes in this way.

If i'm pushed for time I put the whole potato in the microwave for 7 ish minutes, wait to cool and then wedge them. Like you might do with a jacket spud.
You might want to add some herbs, garlic, some other veg like peppers, salt and pepper.

With sweet pots I put them in and peel them after - the skin comes off far easier when they're roasted.

I use King Edwards - great flavour, sprinkle with maldon sea salt and use lard or goose/duck fat for a crispy exterior and fluffy centre.

My DD's are keen to try sweet potatoes so I might try wedging them first.
I thought wedges were easy to do. I'll be wondering now why I've never done them before! Grin

I par boil mine before I put them in the oven just as you would roast potatoes. nice fluffy middle then to.

yes par boil otherwise they can be hard and not fluffy at all. I always use salt pepper and smoked paprika

Well, 3 of my DC weren't to keen on the sweet potato wedges although the other one wolfed them down.
They did like the cheese and tomato pastry thing that I did so some success with a home made meal! Grin
