Best soup recipe

When ever I make a soup it alway tastes rather bland. I would really like to hear your best soup recipes especially if they can give you at least 2/3 of your 5 a day. Would rather have meat free but not veggie so open to any suggestions.

I make a variation on minestrone using whatever I have left over...

Sweat an onion, leek, celery and garlic in olive oil.
Add bacon lardons - good for taste but not essential
Add handful barley or lentils
Stock - a stock cube will do, but homemade better IMO.
Tin of tomatoes
Oh and lots of herbs and seasoning. Once I add the stock I usually put in an old end of Parmesan.
If you have cabbage chuck in at the end.

Usually goes down v well with boys who prefer soup with bits in. If it is tasteless, a slug of balsamic works wonders!

I cut up a butternut squash, red onion, few carrots, and celery. Sprinkle over cumin and dried chilli flakes and salt, pepper and olive oil. Roast in oven for about 45-55 mins then purée with veg stock. DH loves this with fresh bread rolls.

Three here

Curried parsnip. You need I large parsnip, cheap curry powder, an onion, a little bit of oil or butter, skimmed milk and a blender.

Chop onion and fry till nearly translucent. Add chopped parsnip. Then add 1 tsp curry powder, more of you like it strong. Add some of the skimmed milk and cook untold parsnip cooked. Blend. Return to saucepan. Then add skimmed milk until it is the consistency you want or will feed the number of people you need. Bring to boil. When serving if you want to look.posh, swirl some creme fresh or natural yoghout in it.

Mediterranean fish soup. Lightly fry some onions and garlic. Add a tin of tomatoes, celery if you don't mind it, black olives and herbs, thyme or basil fish, I normally put in white fish and prawns, the latter towards the end.add some water to thin it, bring to boil until fish cooked add prawns and serve.

Lentil soup.

Fry onion and garlic. Add packet of red lentils, beg stock cube, tin of tomatoes, water or skimmed milk. Simmer till lentils mushy. Remove scum and press down tomatoes until indistinguishable. Again add liquid till consistency you like. By tradition, use water and then something acidic eg vinegar to cut down blandness, to taste.

A sloosh of dry sherry works wonders in all vegetable soups. Try piercing the skin of a red chilli a few times and just adding it to the pan while the soup simmers (and on that note, I always think that no one ever, EVER adds enough pepper to soup so give that a go too) Smile
