Help: meals using only the oven/microwave

ThePonderer · 09/09/2013 13:15

Most of my kitchen has been removed - long story - and for the next two weeks I have only a conventional oven, a microwave, and a kettle.

Any ideas for meals that I can cook entirely in the oven, e.g. all-in-one traybakes with meat and veg in the same container?

I don't have a sink so the less washing up the better...

Thanks!

Jacket potato with whatever you like with it?

Scrambled eggs?

I think you can buy some steam bags to cook chicken in the microwave. Same with veg.

thinly sliced potatoes
apple sauce
pork - sliced loin or chops
box stuffing mix

Put the oven on full

lightly oil a baking tray or roasting tin
spread the potatoes over the tray
put pork on top
put apple sauce on pork

Make up the stuffing and put on top of pork/apple

Bake for 30 - 40 mins

Toad in the hole, with ready prepped veg from the supermarket - open the packet, add a couple of spoons of water and microwave for a couple of mins.

Lancashire hot pot

Mixed roasted veg

Greek lamb stew Nigella Lawson
Jaime Oliver does a chicken tray bake thingy in 30 min meals I think. He also does chicken in a bag in naked chef
toad in the hole
any kind of casserole
baked fish jackets and roasted veg
Can't think of any more off the top of my head but Google one pot meals and see what you get
my microwave instructions has recipes in Smile

Get some of those disposable foil oven trays to save the washing up (and they can be recycled, so that's Smile). Cook sausages in the oven with a tin of two of ratatouille. Serve with garlic bread. Best of luck!

You have an oven?
There's loads you can do.
Salmon in a wrap of tin foil, lightly seasoned and bake, served with a salad of either your traditional cold salad or a hot roasted one.
Casserole.
Hotpot.
Roasted veg with crusty bread.. THe veg is an assortment of different root veg, the more the better. Chuck in whatever herbs and some garlic. Cover with foil and bake.
Cauli/brocoli cheese, think you can buy ready made cheese sauce. Same with doing a macaroni cheese and use the fresh pasta.
Jacket potatoes.
Bake rice and serve with a baked curry.
Chicken/meat/fish, wedges and veg done in the microwave.

Thanks everybody, there are some really good ideas here!

I will definitely try the pork and apple, sash. Sounds really good. Toad in the hole is also a brilliant suggestion as I know my family like it.

Unfortunately they don't like cheese sauce. (Though I do.) Or jacket potatoes. Hmm

Not so sure about hotpot or casseroles - wouldn't I need to brown the onions and meat on a hob first?

Bread, and garlic bread, of course! Hadn't occurred to me at all.

ihear, I love the idea of a hot roasted salad. Better for this weather.

Salmon on the menu tonight with some roasted veg, I think!

Also, those disposable foil containers are a godsend!
