How do I get it nice and tender? I am rubbish at cooking beef. Any tips please?

Brisket does not roast well its better done in the slow cooker or in a casserole covered type dish with a lot of liquid in the oven low for most of the day.

agree with claimed. long and slow otherwise will be as tough as old boots. americans (and me Grin ) serve it with bbq sauce. I cook mine with onions and red wine and then eitger make or use shop bought bbq sauce. yum

I really love the flavour of brisket and the texture, but as Claimed says it needs a long, slow cooking.

There's a nice recipe here by HFW , quite simple, and you see he cooks it for about 5 hours overall including some 'crisping' time at higher temp at the end, but he starts with a piece of around 2.5 kg so you would (probably) need to scale your times down.

On a bed of carrots, onions and celery cooked a long time in a slow cooker with a few dashes of Lea & Perrins (or in the oven in a deep covered casserole). Puree the veggies and serve as gravy - serve with dumplings.
