Lentils help

We are trying dhal for the first tine this week using red lentils we have never really used lentils before so I am a bit clueless any tips?

Also I have found another recipie using green lentils are red and green easily subsitited for one another or are they terribly different?

I love homemade Dahl. You don't have to soak the red split lentils but rinse them first (in a sieve). Don't add salt until the lentils have finished cooking or they go tough.

Green lentils have more texture than the red ones and take longer to cook, I tend to use Green ones for veggie French stews and things like Mejadra where you want the lentils to retain their shape.

I use red split ones to thicken recipes, for soup and for things like Dahl where you want them to break down almost completely.

Yellow split peas are good but take FOREVER to cook Smile

Sorry, in answer to your question! Yes, you can substitute them, but the recipe may be a bit mushier and you may like to shorten the cooking time.
