I have no blender or other contraption so all my soups are the kind with bits in. So....what have you got for me? Grin

I can smell Autumn....she's there...it's time to think on!

I am particularly interested in vegetarian and vegan recipes but meat is good too! Grin

Another nice one is golden soup. Fry up a leek then add 2 pints of beg or chicken stock and lots of yellow and orange veg: yellow peppers, sweetcorn, sweet potatoes and butternut squash, with dash of fresh lemon and orange, turmeric, spices and lots of black pepper. Blend 2/3 of it and keep 1/3 chunky for the texture. It's slightly sweet and fragrant. My friends always order it if they're coming for lunch.

Maryz - this sweet potato, coconut & lime soup is amazing - I've served it at dinner parties! You can cheat improvise a certain amount with it too (I rarely bother with the lemongrass and DH hates onion so I use extra garlic).
I was actually planning to make it for lunch today but ran out of time.Sad

Has someone said Tomato Soup? Cut round the stem bit of about 2 lbs of toms, peel an onion, roughly chop (or just chuck in) with veg or chicken stock about an inch over. Bring to boil and simmer say 15 mins. Liquidise - it is very like Heinz tomato soup but fresher.

Made Kimchi soup tonight
here is a classic recipe
Hot and Sour and very satisfying.
I don't use beef but add a leek and an onion in the begining.
I usually add a small tin of clams in brine and glass nooddles at the same time as the tofu.

Spiced vegetable soup...fry 1 onion & about 400g carrot/swede Add 1tsp each of cumin & coriander, 1/2 tsp turmeric & 1/4 tsp chilli flakes Add 750ml stock(i use 1tbsp Marigold) & simmer til veg cooked Hits the spot when you want something spicy!

I know Gillian McKeith gets slated a bit around here, but her Carrot and Almond Soup is a keeper!!

Carrot and Almond Soup (Gillian McKeith)

2 Onions, peeled and chopped (approx 280g)
2 Garlic Cloves, peeled and chopped
6 Carrots, peeled and sliced (approx 538g)
2 Celery Stalks, trimmed and chopped (approx 82g)
1 Tbsp Vegetable Bouillon Powder (approx 10g)
2-3 Tbsp Chopped Fresh Coriander, stalks reserved
2-3 Tbsp Chopped Fresh Parsley, stalks reserved
100g Ground Almonds
1.25 litres of Boiling Water

In addition to GM's recipe I add Salt and Pepper to taste

Directions

  1. Place Onions, Garlic, Carrots and Celery into a large pan. Add 1.25 litres of boiling water and the bouillon powder. Bring back to the boil and add the herb stalks.
  2. Simmer for approx 30 minutes or until the vegetables are tender.
  3. Remove from the heat, remove herb stalks (by sieving and reserving all stock)
  4. Blend vegetables in food processor to a soup like consistency.
  5. Return to the pan and add the almonds plus seasoning if required and reheat.
  6. Serve and garnish with the coriander and parsley.

Roasted cauliflower soup.

heat oven to 180.
peel 6 cloves of garlic, remove cauli leaves.
blanche cauli (whole or florets) for a couple of mins.
remove from water and set aside to steam dry.
peel 3 large spuds cut in to 2cm cubes.
put cauli and galic in a roasting tin and brush with olive oil or veg oil,
cook for 15 20 mins till it gets a nice colouring and feels cooked when
you put a knife in.
at about the same time cook your spuds in about 1 ltr of veg stock.
add cauli and garlic when cooked to spuds and stock and blitz till smooth.
if you want a bit more luxury add some blue cheese

Once you've made a sweet potato soup with a good dose of chilli and ginger and some coconut milk you can make it completely AMAZING by putting some cashews with soy sauce all over them under the grill and tossing them about to stop them burning. They go all sticky and salty and yummy and then you can sprinkle them on the soup like croutons.

Actually I always burn mine but I eat them anyway because they are AWESOME.

I am a lazy cow.
So, I sling everything raw, roughly chopped into my slow cooker ,put on low & leave.

Today I made red lentil & sweet potato. Very very cheep, and bloody lovely.

A couple of sweet potatoes (Aldi, bag of 4/5 69p) peal & roughly chop, Chuck in.
a cup of split red lentil"s, (home bargains 79p)
2veg stock cubes,600nl water
A carrot peaked & roughly chopped
whatever I have in thre bottom of the fridge gets chucked in really.
A bit of chilli powder.
Leave til lentil s are cooked & veg is soft. Stir every now & again.
I do blitz in processor but only half of it as I like chunks.

Delish

Oooo This is an awesome Recipe for soup and dead easy, my kids love it.

2 large carrots whole
2 large white onions whole
8 large Chicken Thighs whole
2 large celery sticks whole
2 Cans Chick Peas

Boil up everything until then veggies are tender and the Chicken is cooked through. allow to cool and remove the veggies and chicken. Chop the veggies into little bits and shred the chicken. Add the Veggies and Chicken back to the broth. Reheat until Boiled, season to taste and enjoy.

Fridge soup
1 Gather whatever manky limp veg is lurking in the cold drawer of fridge.

  1. If youve got time roast it in the oven for 30 mins before adding to veg stock.i think its nicer if roasted first.
3.sweat an onion in butter till soft add the veg stock and vegetables. I throw in whatever I fancy once the soup is simmering,it may be a handful of lentils or beans
  1. Blend and season to your taste.

Kimchi soup sounds amazing(and just the thing for a cold day).But where do I buy decent Kimchi?I also really love the idea of soy roasted cashews and garlicy croutons with seeds.I made the Vegn soup further up the thread with the sweet potato,beans and Quinoa and it was fan with lots of toppings on(advocado,tomatoes,spring onions,crunched-up corn chips and lots of lime and coriander.Even my totally meat eating Dd's loved it.( sorry for typos).
