Those yummy broths with noodles and veg. That feel light and yet have lots of flavour. I've experimented, but it never really works. Does anyone know how to make those kind of dishes or could point me in the direction of a website?

There's a wagamama cookbook which might give you some ideas. I think the key is really good stock, however you decide to make it/buy it - without that it's just watery noodles.

I add a splash of Mirin to develop flavour, and tend to cook meat (if having it) separately with lots of spices/herbs.

Thank you for that. You are right - watery noodles is how it turns out.
