Innovative things to do with a whole cold roast chicken?

It's just sitting there staring at me challenging me to turn it into something more sumptous that a tedious salad with a few limp green lettuce leaves. However am lacking inspriation.

Any ideas?

My very favourite cold roast chicken recipe is to stand with my head in the fridge ripping bits off and dipping them in the jar of mayonniase, but appreciate you may need something more creative and less gluttonous.

Quiche? Re-fry the bits with honey, soy and sesame seeds to make a slightly more exciting salad?

Coronation chicken is nice.

Also,put some leaves in a bowl.
Add shredded cold chicken.
Steam asparagus,then when still hot,add a tablespoon or two of lovely juices form roasting pan.
Add to leaves with a squeeze of lemon.
Delicious.

Like the first one alot. Along with guilty cramming large bits of crispy skin in gob. Tho as needs to be for two it's not a goer as we cant both fit in the fridge at the same time.

Like the oriental salad idea... hmmmm. Tho DH not keen on sweet / savoury, annoyingly. Quiche = pastry + eggs + cream = fat which does not equl weight loss, but oh how I love it.

Ohhh - nice touch of using cooking juices as a dressing. And if we had some nice crusty bread that would be pretty yum I reckon.

Buy good instant noodles from Asian shop.
Top with shredded greens,chicken and sesame oil.

Fry up some onions, add bits of chicken and a can of condensed mushroom soup and cook it up with some frozen peas and /or sweetcorn. Really nice with rice on the side.

chicken and mushroom pie .. just make it in a white sauce and put frozen pastry over the top

chicken fried rice .. scrambled egg, fry pre-boiled rice, add chinese seasoning, small veg (frozen good), garlic, soy sauce

I make this with the leftovers from the roast chicken we have had the day before.

Rice
Peas
Shredded Chicken

Cook rice and peas and mix it with the chicken. Yum.

It might be not innovative but i like using cold chicken with fried mashed potatoes and brussel sprouts.
