What would you serve? (I am not veggie but everyone else is so it seems silly to bother with meat.)

There are the following restrictions:
No goats cheese
No chickpeas
No stuffed peppers/mushrooms
Not spinach and feta pie (had that last time)

Help me, oh wise ones, or I will serve everyone bacon and be done with it...

I would make Mexican! So many directions you can take with it. Nachos and beany salad to start with a nice homemade salsa, melting cheese, refried beans and sour cream
You can easy peasy make cheese, bean, spinach or quorn enchiladas, just buy flat bread wraps and your selection of filling and a sauce and bake for half an hour. Serve with salad, flavoured rice or cous cous or sweet potato wedges!! Yuuuuuuummy WineWine

Bulgur wheat salad with red pepper, spring onions, small tomatoes, etc with falafel, pitta bread, hummus and baba ganoush (grilled aubergine dip)

Fresh fruit with ice cream or sorbet as dessert.

Alternatively a pasta with broccoli or a mushroom risotto with flat leaf parsley and saffron.

Try something from Dennis Cotter the man is a genius with vegetables, his flavours are bright and interesting....not a veggie cliche in sight and they are beautiful enough to grace any dinner party.
