I am working evenings for the next 3 weeks and need to leave food for DH to feed himself and the children. I am running out of ideas and would appreciate some suggestions. Needs to be prepared before I leave at 4.30 or able to be thrown together in 5 mins with no hassle. Also have a dairy allergic DD :)

So far I have shepherd's pie, chilli, bolognese, barbecue chicken, tortellini and ready made sauce. And now am brain-dead!

you've thought of most of the ones i do

sausage casserole?
pizza?
baked potatoes?
quiche, salad and new potatoes?
dh specialises in cooking breaded fish, pots and veg
i do bacon adn leek in a cheesey sauce with mashed potatoes on top

You can do this with
Lasagne and Fish pie as well as Shepherds pie

Meatballs can be mixed and cooked in advance (I usually grill them - 10 mins each side). Then I freeze them. You can get them out of the freezer the night before. When they have defrosted, heat them up in microwave, pour on a tomato sauce and service with pasta, or even easier cous cous and frozen veg.

How about having one night a week for the next three weeks a fish finger/sausage and jacket potato and frozen veg meal. Surely dh could manage to throw a few sausages/fish fingers in the oven and a few potatos in the microwave. It's not rocket science !!

Thai curry. Partner makes a big batch of curry paste and freezes in bags - about 5 meals out of each batch. Just heat up, add lime juice, fish sauce, stick coconut milk in, peppers, green beans, chicken/fish and eat with rice.
