making tomato sauce from fresh tomatos -- quick poll please

tomato glut here.
gardeners delight and beefsteak.
have decided o make pasta + sauce today.
should I skin/deseed?
blitz?

Skin yes but no need to deseed.

I do this and it'f lovely.. Skin them first, then chop half chunkilly and blitz the other half.

Can you roast them in the skin then pick the skin off? I am very jealous! Envy

made the most amazing sauce last night.
cut the tomatoes in half, cut an onion into chunks, 2 cloves of garlic, 2 teaspoons of madras curry powder, a little salt.
roaast in the oven for about 20 min. fish out the garlich peel. blitz it all.
omg it was sooooo good.

I wouldn't bother skinning or deseeding.

I roast them with skins on then mouli them. Takes the skin and white bits (what are they called?) out and makes a lovely textured sauce.
