Hi, is a tin of tomatoes in a curry enough liquid or do I need to use stock as well? Also is it safe to brown the meat and onions etc the night before and leave in fridge to put on in the morning?

Tomatoes should be enough, I'd say.

I usually put ingredients together the night before a store in fridge - flavours seem to combine much better when I do this.

I don't bother with browning any more - ever since I tried this recipe which Jamie Oliver reckons tastes the same if not better without doing so (he tried both).

Not safe to brown the meat and then cook BUT no need to brown anything for the slow cooker.

If you want stock then use a tiny amount of water to dissolve a cube.

Why? Many slow cooker recipes instruct you to do just that. Or did you mean browning then putting in fridge is bad?

I meant not safe to brown then our in fridge over night before cooking.

You need to get meat up to a safe temp asap and you will be interrupting ether process therefore increasing the chance of bacteria multiplying.

I've tried recipes with browning and without and it makes no difference to appearance or flavour -except for sausagesGrin
