Beetroot and chocolate

i have a lot of beetroot from the garden to use up so was going to make beetroot and chocolate brownies. But all the recipes I have found refer to cooked beetroot, not the raw stuff I have.

So does anyone have a recipe for raw beetroot, or know how I need to cook it to use in a bake?

this is lovely. I mince the beetroot rather than grate in the food processo though seems to mix in better.
