Autumn soup ideas

BikeRunSki · 30/08/2013 10:30

I love soup as a autumn/winter lunch, but need inspiration for new ideas. I have the next two weeks off work to cover DS starting Reception on half days and plan to batch cook in the mornings. My standard soups are:
Red lentil and tomato
Leek and spud
Spicy root ( parsnip, carrot, sweet pot, ginger )
Noodle (Marmite broth, noodles, veg)

Am veggie. Ideas please to liven up lunchtime. DD is nearly 2 and is best with thick soups.

Thank you!

I make a roasted pumpkin soup

Deseed a pumpkin and roast with salt and pepper and little oil for about and hour.

When cooled remove flesh from skin.

Fry an chopped onion for about 5 - 10 mins, can add a little garlic if you like not to much as it can over power the flavour of the pumpkin.

Add pumpkin and some stock until covered I normally use chicken bring to the boil then simmer for 30min.

I use a stick blender to get it smooth. Add a handful of good strong cheese when serving.

spinach (or kale), chillior ginger, onion and coconut - very West Indian
butternut squash with yoghurt and lime
carrot and coriander
carrot and chestnut
cauliflower and stilton
celery and spud
celery and leek
french onion with melty cheese and toasts on top

tesco do a nice Soup & Broth mix which has split peas, pearl barley and marrowfat peas - lovely with dumplings made with veg suet.

Thai butternut squash is my favourite. Fry some Thai red curry paste for a minute, add cubes of squash, veg stock and cook. Once soft, blend and add a can of coconut milk. Might not be suitable for a little one though...

Marking place for ideas!

We love BBC Good Food's spicy red lentil and chick pea soup.
