Does anyone have a good recipe for a really nice, light fluffy white loaf of bread?

I've been using Delia's basic recipe and decided I don't think much of it. It starts to go stale after a day but isn't so light and nice that it's entitled to. Does anyone have a good white bread recipe?

I haven't made bread for years and wouldn't know where to start now - also I can't be arsed!

I just can't stand shop bought bread any more.

Sorry, I know that makes me sound like a mumsnet loony. Grin

But I've always had a thing about shite bread.

Bumping for the late crowd on the offchance. I used the usual delia one and just put a bit more yeast and sugar in to see what the result would be

1lb 8 oz white bread flour
15 fl oz water (1 part boiling, 2 parts cold)
2 tsp salt
1 tsp sugar
1 sachet dried easybake yeast (allinsons)
2 tablespoons olive oil

It's all in the kneading IMO - however I have a feeling all my tips have disappeared into the ether - will do another search
