Life is a Minestrone

Just had a bowl of left over minestrone, which I made the night before last. As with all dishes like that, it was even better after a day in the fridge!

I got the recipe from Nigella's How To Eat and I often make it - its one of my favourite soups.

But, get this ... no garlic and no tomato!

Is that authentic for a minestrone recipe?

I'm not complaining ... I love it Smile

It really is good Miffy. You must start off with a generous amount of olive oil and butter, cos you give all the vegetables a gentle fry for ages before putting any stock in. I think her 6tbsp oil is probably a bit over the top though!

Minestrone just means vegetable soup so you can really put anything in it!

I would always put tomatoes and garlic in mine though :)
