Savoury, veggie muffins recipes needed please!

I want to make some savoury muffins to freeze for ds2, who is 9 months old.

Anyone got any tried and tested recipes?

I'm thinking spinach and cheese,or courgette or similar.

1 slice of bread
2 eggs
140g of veggies (cooked)
40g cheese

Whizz in blender, bake at 180/200 for 20 mins.

Measurements are only approx and mine cook in this time because I use a mini muffin tray. Enjoy!

My dad, bless him, lives by an artisan bakery and brings at least three loaves on a Saturday when he visits and we always have some left. It soooo delicious I'm always looking for ways to use it up that doesn't involve making breadcrumbs!

Sourdough will work with you recipe won't it totes?

Have a look at My Daddy Cooks, he makes some brocolli and tomato (I think, it's been a while) muffins which are yummy.

So I have a batch of MrsGubbins muffins in the oven....will wait and see how they turn out. I have a glut of spinach, so I have only used that and carrot.

I'm going to have a go at the blender ones later.

I've just made some with added spinach for lunch tomorrow for DD, hope your DS enjoys them.

He loved them! In fact everyone did....there are only three left, so lunch for DH and ds is sorted for tomorrow, but none for the freezer!
