Good sharing dish - no red meat

Looking for something nice but fairly informal to cook for friends. No red meat but chicken, seafood etc. are fine. If they ate red meat I would do something like a big pot of chilli and tacos or a big lasagne. Ideally something that doesn't need lots of last minute cooking. Would really appreciate some inspiration as feel very devoid of it today! Thank you

cheesey tuna bake with salad (easiest no last minute cooking unless you count stocking garlic bread in the oven)

I love this Chicken Basque one pot meal, have cooked countless times. I omit the oranges.

Mmmm...the chicken basque looks lovely. I wouldn't be able to use the chorizo though - do you think it would lack something without it? Will maybe try it as is though anyway but just for us or for different friends as looks yum!

Chorizo is pork not beef? Or is that not what you mean?
My mum makes with chorizo and thinks it is still good but personally I think it is much more flavoursome with it.

Ah yes - they don't eat pork or red meat - sorry should have been clearer - only chicken and seafood. Will defo try the recipe anyway though at some stage as I love chorizo myself!
