this is really nice and easy to do. (I swapped the soup for mozzarella and tomatoes because cold soup makes me heave.

Joint of roast beef .. You could even cook it tonight. Serve with veg and garlic potatoes

This is my easy dish:
Halve, deseed and roast a butternut squash until tender. Scoop flesh into a saucepan and add 2 teaspoons of Barts Thai Yellow curry paste and one tin of coconut milk. Heat until you have a fairly thick sauce then add enough prawns for however many you're serving (sorry that's vague but I add one or two boxes of Lidl's frozen prawns) and cook til prawns are just cooked. Just before serving add some halved cherry tomatoes. Meanwhile cook some long grain white rice (easy cook works!) add peas, crushed cashew nuts and chopped coriander and serve alongside your Thai yellow curry. Easy peasy.
Or do barbeque steak with salads.

Or Delia Smiths parmesan salmon - squeez lemon juice over salmon fillets, then spread with pesto sauce and top with breadcrumbs and parmesan mixture. Grill til cooked through, serve with white rice (mixed with peas, toasted pine nuts and chopped flat leaf parsley)
Google her recipe for proper quantities but tis very simple.

Jamie Oliver does a braised 5 hour lamb with veg which is absolutely delicious. Just stick it all in a big pot, leave it alone and you'll have the most tender meat after 5 hours.
I serve it with steamed green veg and new potatoes roasted in olive oil and sea salt.
