I have been charged with providing some puddings for my BIL's 60th party on Saturday.

A couple of guests need gluten free.

I fancy making a cheesecake (cos I can use gluten free digestive biscuits for the base).

However, I'm up for any suggestions of gluten free lovelyness.

TA.

Just wanted to update to say a big thanks.

I made the Nigella Clemantine cake bit with oranges. I covered it in whipped cream and decorated the top with mandarins soaked in grand Marnier (after having a panic about whether GM was gf - it is :) )

The gf guests loved it (as did everyone else who had some after them).

So THANKS :)

I do a GF soft chocolate cake for work. It's a nick Nairn recipe. Never fails either.

I don't have a link but the recipe is.

200g 70% dark chocolate
200g unsalted butter
140g caster sugar
7 eggs separated

Pre heat oven to 160oC
Melt choc and butter over a Bain Marie and leave to cool.
Whisk sugar and egg yolks and sugar until light and fluffy.
In a separate bowl whisk egg whites to soft peaks.
Combine chocolate mix and yolk mix and then fold in egg whites.
Pour into an 8inch greased baking tin and pop into oven for 45 mins.

It will crack during cooking and sink when cooling but don't worry.

CrikeyBlimey that sounds bloody dee-lish. Love the topping idea, makes it really dessert-y.

Glad it went down so well.
