Help me use up this Single Cream

Got a huge container of single cream at Tesco, reduced. I can't decide what to do with it. The only thing we don't really eat is curry, which I know can use single cream. I need to use it by the 20th, so have a few days. It's only me and DD (13 months) who will eat it, unless it's a dessert, then I can tempt husband into eating some.

Hmm, well, despite what it says in the recipe, you can use single cream in this pudding. It will also work in any tomato sauce you might do. One of our current favourite recipes is penne with the following sauce:

Two sprigs of fresh rosemary (can be dried, but easier to get the right amount with fresh) fried with chopped chorizo in a little butter in a largish frying pan.
Once the chorizo starts releasing oil, then add in two tins of tomatoes and turn the heat down to medium/low
Put the penne into boiling water, bring back to the boil then turn off the heat.
Should take about ten-twelve minutes to cook the pasta.
Just before pasta is ready, turn the sauce down to low, chuck in a good dollop of cream and stir.

The same recipe also works with bacon (cook whole slices though and chop & chuck in the mixture once cooked)

Marsala sauce? Fry onion, mushrooms, garlic add Marsala wine, heat. Add cream. Use for pork, chicken or just mushrooms. Quick and tasty.
