Pears - recipes please?

I have 2 pear trees, one I think is conference type, the other is a fatter type. They are GROANING with fruit. I plan to bag the best ones and sell at the end of my drive and at the local market. Have apples too.

But what can I make in bulk that will freeze or preserve?

Poaching could be the way to go. You could do a big batch with wine or sugar syrup. There are lots of variations. This is a favourite of mine, which should freeze ok.
