Clam chowder

Had a beautiful meal at a seafood resturaunt on Friday ..one of the best I've ever eaten. Had clam chowder to start and while it was very lovely it did not taste like the traditional clam chowders I have eaten in the USA.

I feel I need to scratch that itch IYSWIM, has anyone made a clam chowder and was it nice?

I have attempted, without following recipes and it kind of worked. I have never had one in the UK which tastes the same as Clam Chowders I have eaten in the USA. (particularly the one in SF which was served in a hollowed out loaf of bread).

CLAM CHOWDER
Ingredients
2 tins clams (asda are good)
I packet of bacon Chopped
1 Onion; finely diced
3/4 pt water
I tablespoon flour
3/4 lb Potatoes; peeled and diced (or if you are in a hurry a tin of potatoes will do!)
Black pepper; freshly ground
3/4 pt Milk

Preparation
In a saucepan slowly fry the bacon and onions until golden;
Add the flour
Add the water,clams, potatoes and pepper, Bring to the boil and then simmer for about 15 minutes or until the potatoes are tender.
Add the milk and simmer for 5 minutes, Do not boil as the milk will curdle
Ladle into bowls
Traditionally served with crackers but I serve with bread.
You can make this with any fish or shellfish. I sometime add cod/haddock to bulk it out

Google the recipes on the Saveur website - there's one for New England clam chowder and another for fresh corn chowder which is lighter and can have any fish or shellfish added.

My family is from New England and the saveur recipe replicates our family recipe pretty closely - main difference is using smoked pancetta or lardons or even bacon instead of salted fatback pork! Salt cod is a nice addition as well but needs some serious soaking beforehand.
