Using dried herbs

Hi

I cook with the following dried herbs a lot:-
Oregano- pasta sauce, kebabs
Bay leaves- stews, ragu...most things
Tarragon- chicken, mushroom sauces
Thyme- beef, chicken, mushroom sauces
Fennel seeds- sausage pasta

What others do you use? Celery seeds, Sage, Marjoram......?
What sort of foods do you cook them with?

I use Garlic Powder, Lemon Pepper, Chilli Flakes and Paprika and ground Corriander a lot. Mainly in tray bakes, such as piri piri style chicken.

Have you tried using fresh herbs, I've planted a herb garden this year and the difference is amazing, I get through tonnes of lemon thyme and common thyme - it makes nearly everything taste better.
