Hot buffet to include roast pork/applesauce rolls?

Help!

Ds' birthday party Saturday morning - family gathering same afternoon. Need to feed them lovely food but will be at said party all morning.

Also have the biggest joint of pork the world has ever seen (serves 12!) that needs to be eaten (thanks Tesco, could have sworn I ordered 1 kilo Hmm). Thought I could stick it on to slow cook all morning and do like a mini hog roast type thing with baps and applesauce.

So far so good but I'll need a bit more food than that I think to keep both sides of family fed and happy! What would be good alongside the pork? I do cook and am happy to do hot food / cold dishes / whatever but it all does need to be make-ahead. I'm drawing a blank!

Family parties at ours always include hot pork butties and apple sauce (and stuffing). Goes down really well.

How about some poached salmon (good cold) and a turkey crown? Some salads, cheeses and other buffet type stuff.

The pork butties thing is good because it can be hot, warm or even nearly cold.

I love that pre-made red cabbage with pork. Doesn't require any cooking, just serve up!

Someone told me today about a Jamie Oliver recipe that sounds delish & really easy- beet root, balsamic vinaigrette and feta. I think you can use that pre cooked vacuum packed beet root. Finely chop in a food processor...

I use another Jamie Oliver trick for lasagne actually... Instead of making bechamel sauce, use creme fraiche, loosened up with water & add salt and pepper. Means you can just make bolognaise ( days before?) and then assemble on the day. I use a couple of bags of shredded cheese for convenience. Lasagne always goes down a storm.

Turkey could work actually. Can you poach salmon ahead?

Spiced red cabbage, yum. But I spent hours making it last Christmas, it was amazing and none of the buggers would eat it. Philistines Grin

Iate is that beetroot recipe like a dip?

Roast pork apple sauce rolls sound great.
How about popping in a tray of stuffing as you cook the pork to give the baps a bit more oomph?

Corn on the cobs would go well and could be pre-cooked to tender ready to pop in the oven (in a tray with some butter) for 10 mins to warm up.
Coleslaw (or any creamy salad) also suits pork rolls and can be made in advance.

Given that all that is a bit squishy you could do with some crunch, but I'm struggling to come up with anything very exciting that can be pre-made, apart from veg sticks. (hopefully you'll have loads of lovely crunchy crackling).
You could premake some polenta (or buy it ready made)and cut it up into chunks ready to pop in the oven for 20 minutes - crunchy polenta chips sprinkled with cheese Mmm-mmm.

I have never eaten or cooked polenta but would love to - is it easy?

Polenta is very easy to make (mix the grains with water & butter and warm and whisk til porridge-like) You can eat it like that - like mash - or you can cool it and cut it up and oven cook like roasties.
But you can buy it ready made (in tesco) and just cut it into chips, season (rosemary is good) spray oil or hot oil on a tray and crisp in oven. When it comes out, grate on some parmesan while hot. Lovely.
