In a stupidly busy week I decided to make lamb patties tonight a la Nigel Slater.

We combined all the ingredients: beetroot, lamb mince, garlic, onion, fresh herbs and bulgar wheat. Didn't drain water off enough then realised the patties were meant to be left to chill for at least an hour.

Washing up everywhere, surrounded by beetroot and realising we had carpet fitters turning up to do whole house tomorrow and baby was hungry now. Whacked it on Tupperware and had eggs and chips and freezer food!

So what do I now do with this Tupperware of soggy patty mix? We're getting carpets tomorrow so chances are another hectic day. Do you reckon I could bung it in a loaf tin like a meatloaf?

Spread it out on some layered kitchen roll to soak up the excess liquid, form into patties and cook/freeze for later?

Sounds like you had an ambitious day! I reckon that sounds a good idea to do a meatloaf thing with it - maybe the water will slightly evaporate overnight? Tell us what happens anyway - intrigued to know.

Squeeeeeeze as much water out as you can, shape them, chill them and cook tomorrow. They won't take long will they, so now all the hard work's been done they should be an ideal dinner for a hectic day. You'll lose quite a bit of flavour when squeeeezing them, I'd have thought, so make sure you have a tasty spiced-up mayo/ tzatziki/ whatever to go with them.

Would that work?

Meatloaf sounds good - or use it as a pie/pasty filling - or top with potato a la shepherds pie?

If you're going to meatloaf it pop an egg in to help it set.

Hmmmmm.

Little one just filled nappy then threw up all over me so I'm doing nothing about it tonight.

Might try again tomorrow with an egg after the carpet fitters leave Confused

Would breadcrumbs help? Maybe soak up some of the juice?

I accidentally invented BEETLOAF and it was amazing.

Popped beaten egg, handful of breadcrumbs and some ground coriander in. Popped in oven for 50 mins on 200 and little one devoured it. Needs some work but I think I have a new recipe!
