Meat Loaf

I made one yesterday based on a weightwatchers recipe. It comprised mince pork, fresh breadcrumbs, chopped onions, chopped carrots, mix herbs, salt, pepper and one egg all mixed up and baked in the oven.

DH was not that impressed with it and I must admit, I was disappointed with the result.

Does anyone have a recipe for a tasty meatloaf?

I would grate the onion and carrot instead of chopping, because it will blend in better and not be so lumpy after cooking.

Also, I'm not seeing any liquid to keep it moist...I usually use a few squirts of ketchup and a bit of Worchestershire sauce, although you can substitute nearly any sauce for the liquid...I've done it with tomato sauce, leftover marinara, leftover curry (boy was that one good). You could even use a bit water or milk...but it bakes for so long that if you don't add water it will get dry. Plus, I also always add a LOT of minced garlic.

Another thing-I've never done with pork, that sounds odd to me. We always do mince beef.

Thanks Corbin. It was dry and that was part of the problem. I must admit I always thought that meat loaf was made with beef so I'll definitely use mince beef next time plus incorporate your suggestions for keeping the mix moist.Smile

Did a lovely one for ds with pork mince, added chopped tinned peaches, some mixed herbs and a little sweet chilli sauce and baked until browned. He loved it.

Mine is with turkey mince. It is 1lb turkey mince, 1/4lb sausage meat, onion, celery, egg, few oats, some herbs. Shape into a loaf but put on baking tray. Cook for 1 hour.

15 mins before end mix together a little ketchup and mayo and coat the meatloaf with it and return to oven.

read the OT as malt loaf and was feeling shocked at the use of meat!
