DS isn't a great eater but he does like bready things like muffins, pancakes, flapjacks ect. Can anyone recommend some easy healthy or healthy-ish recipes? He doesn't like stuff in them, like raisins or dried fruit. I think it's a texture issue. He's fine with peanut or other nut butters and small seeds and no allergies. Thanks!

Grated carrots? Pureed apples/apricots/plums? You can buy fruit spreads in Holland and Barratt which can be added into cake mix.

Make pancakes using 50% wholemeal flour. Omit the sugar and add mashed banana instead. Make savoury versions of pancakes or muffins using grated courgette or sweetcorn.

Homemade breadsticks topped with cheese and onion, seeds or herbs are really nice and can be served with humus, cream cheese or avocado dip.

I sometimes add oats to my pancake mix too, and a handful of slightly defrosted frozen blueberries.

If you are looking for nutrient dense treats then try recipes with almond flour and coconut. Try seaching for Paleo treat recipes, they are very nutrient dense. I recommend Paleo parents, health bent, paleomg, food lovers kitchen, Paleo mom, civilised caveman but there are loads more.

You can substitute oats for flour in most cupcake/muffin recipes. So if it asks for 200g of flour, I tend to add 130g flour and 70g oats. You can do carrot cakes, courgette cakes, banana loaf etc. Also, they don't notice when you reduce the sugar in the recipe Wink

I developed this recipe of Multi Veg Muffins for a nephew who is a bit fussy with his eating. They generally go down well if your little one likes cheese and cake combo...
